Zuccini Italian Salad
2 zucchini spiraled
1 red pepper
1 orange pepper
1 green pepper
1/4 red onion
1/2 cup cherry toms
Salt and pepper
Italian or pizza seasoning
Pesto
Chopped olives or picked cocktail onions
Lemon or lime
Olive oil
3-4 cloves garlic
Adding chopped chicken makes for a great full meal

Date Raisin Coconut Bites
In Blender, mix till a ball starts:
Dates
Raisins (white raisins give a smoother, less raisin taste than traditional)
Add the following and blend until uniform:
Shredded raw coconut
Nuts - your favorite; I love walnuts or almonds
Vanilla
Honey
Cinnamon if you like
Roll into balls. Then press into shredded coconut to coat the outside. Alternate: roll flat on cutting board and cut into bars. So easy and so delicious. Great alternative to candy.
